Carefully chosen extra thick salted herring roe on kelp. Both sides of the kelp is densely covered naturally by wild spawning herring with their roe. Enjoy their ocean fresh aroma and pleasant crispness.

Please do not freeze them as this would cause them to lose their unique crisp texture. Herring roe on kelp and herring roe are sensitive to both light and temperature, so wrap them up in paper and keep them in the refrigerator for storage. If kept in the refrigerator, an unopened package will last for 5-6 months. Even after the package has been opened, they will be good for 2-3 months as long as they are kept in strong salt water. After they have been desalted, they can be stored in the refrigerator, but it is best to eat them while they are fresh.

  • How to desalt
    First, soaked them in 1L of water with a teaspoon of salt. After 2 hours, replace them in fresh salt water. Repeat these steps 3-4 times. This desalting process allows the excess salt from the herring roe on kelp and herring roe to move into the salt water, while retaining the natural flavour of them. It is a bad idea to do this in pure water since it would result in the removal of the salt only on the outside of them and would give them a bitter flavour.   
  • Matsumae-Zuke
    Mix the herring roe pieces with shredded surume (dried squid) and marinate them in a sauce containing soy sauce, mirin (rice wine).
