Please do not freeze the herring roe as this would cause them to lose their unique crisp texture. Herring roe is sensitive to both light and temperature, so wrap them up in paper and keep them in the refrigerator for storage. If kept in the refrigerator, an unopened package will last for 5-6 months. Even after the package has been opened, they will be good for 2-3 months as long as they are kept in strong salt water. After the herring roe has been desalted, they can be stored in the refrigerator, but it is best to eat them while they are fresh.

How to desalt
First, the herring roe is soaked in 1L of water with a teaspoon of salt. After 2 hours, replace the herring roe in fresh salt water. Repeat these steps 3-4 times. This desalting process allows the excess salt from the herring roe to move into the salt water, while retaining the natural flavour of the herring roe. It is a bad idea to do this in pure water since it would result in the removal of the salt only on the outside of the herring roe and would give the herring roe a bitter flavour.
